It's hard to believe 2015 is almost here, it almost feels like just last year we were stock piling toilet paper and waiting for the Y2K bug to take us all out. (Or at least all of the clocks.)  We're having a BBQ with our neighbors for New Years, it's suppose to be over 20 degrees so it'll be pretty pleasant out.  Tomorrow we're all going to buy fireworks and tons of sparklers for all of the kids so it should be pretty fun, we don't even have to wait until midnight for the fireworks.  Mostly because it's dark at 2:30 but hey, better than fireworks during the 4th of July when it never gets dark.

Christmas night another three inches of snow fell and today we were suppose to get two more.  That didn't happen but at least it's warm and we got a tiny bit more snow.  Yay for the pipes!  The snow machiners are pretty happy as well, I was talking to my grandpa on Christmas and his friend down in Homer just bought a brand new snow machine this fall and has gotten to ride it a total of zero times.  My dad's mom lives down in Soldotna and she thought they were going to end up with a brown Christmas, the first she could remember since the forties.   She said it did finally start snowing but only a tiny bit.  That seemed to be the story for most of the state though, it's one of the lowest snowfall winters in the past 100 years.   (One of the warmest as well!  It's been so warm here in the Interior that the ice really isn't very thick on the river ad two people have already dunked their cars in it trying to drive across the "ice bridge.")

The Winter Solstice was just a little while ago so we're slowly gaining more daylight now, at our lowest point we were getting maybe thee hours of daylight. Well, if you live on the wrong side of a hill, you don't get sunlight until maybe April.

Today was pretty low key after the past week, we ate a late breakfast (mmm, beer pancakes!) and while Gunnar went on a Transformers Armada binge, Izzy and I made some cakes in her new Easy-Bake and Evan admired his new pile of firewood.  My dad gave him over a cord of really nice spruce firewood and Ev was pretty pumped up about that - we still need to make it out to the Two Rivers cut site to start working on our firewood for next winter so this was a sweet start to it.  We usually burn about four cords of wood during the winter which is pretty decent but we'd like to get a few years worth stocked up.  Right before my dad left home as a young guy him and his brother slit over 40 cords of wood for their mother so she'd have at least five years of wood stocked up and they did that in just a few weeks! (Granted, my dad is pretty badass.)  So we're really slacking compared to him but Ev was really happy and grateful to get that for a Christmas present. 
This bag was actually my present from Ev, I've been looking at it for so long and somehow he picked up on that and surprised me with it and wow, it's way prettier in person!  He's a sweetheart, that one.

Hi everyone!  I hope everyone had a nice day.  Everyone in our family plus two of my brothers' girlfriends spent the day together, playing card games, eating a ton of food and while the boys went out and tested Ev's new shotgun, my brother's girlfriends, the kids and I all went to visit mom at the assisted living home she works at.  She made some really beautiful cookies the night before for everyone so we took a few for the residents to enjoy, helped mom out for a little while and visited with everyone. 
We ended the night eating more and watching Christmas movies.  It was really nice getting to spend time with everyone, we do try together fairly often and have dinner but Christmas is always a nice excuse for it.  It was so warm outside that the guys actually had fun doing their target practice shooting, most years it's so cold with temps hanging out between -20 to -50 below zero F so it was pretty pleasant this year.  Next year we're going to try to make it down to Anchorage for Christmas with Ev's family, we've always spent Christmas up in Fairbanks but that's not really fair to them.  I had committed to watching a neighbor's horses this year so it was  possible but next year should be pretty fun!  It was nice getting to spend Christmas this year with my two brothers' significant others, they're such sweet young women who are so funny and awesome that's it's really enjoyable getting to hang out with them. (My brothers have good taste!)

These pants again!  I ended up stitching up and patching the entire seat and I actually did a pretty good job.  These pants might be a pain with the ever eternally ripping material but at least I'm getting awesome at patches, good enough I went through and patched a ton of Ev's pants last night.  Man, I was on a roll!
My laptop is spazzing out with the keyboard so it's a short post today, I hope everyone has an enjoyable night and fun tomorrow!

The kids are on Christmas break right now and Ev and I both ended up having quite a few days off this week so it's ben sort of like a little vacation for all of us.  It's pretty fun, we've mostly just been outside enjoying the sunshine and doing a lot of sledding and snowshoeing with some firewood splitting in between.   The kids are so excited about Christmas, they can hardly stand it right now!  We made some reindeer feed to spread out on the driveway for Santa's reindeer on Christmas Eve and we're making (more) cookies for Santa today.  We did cookies for the neighbors and family earlier and one thing new we tried out was coconut macaroons.   Dude, those things are so freaking easy to make!

I bag coconut
4 egg white
1/4 tsp salt
2 tbs flour
1 tsp almond extract.

Mix dry ingredient together first then pour in the eggs and extract, mix together, form into balls.  Put into a pre heated over at 325 and cook or 20 mins. (or until slight brown. )  See, that's so easy!  They taste really awesome, they're really fun for kids to make (and relatively mess free) and they're pretty cheap.  I got this recipe off the back of the bag of shredded coconut and was really impressed at how much better these were than the store bought ones.
