The kids are on Christmas break right now and Ev and I both ended up having quite a few days off this week so it's ben sort of like a little vacation for all of us.  It's pretty fun, we've mostly just been outside enjoying the sunshine and doing a lot of sledding and snowshoeing with some firewood splitting in between.   The kids are so excited about Christmas, they can hardly stand it right now!  We made some reindeer feed to spread out on the driveway for Santa's reindeer on Christmas Eve and we're making (more) cookies for Santa today.  We did cookies for the neighbors and family earlier and one thing new we tried out was coconut macaroons.   Dude, those things are so freaking easy to make!

I bag coconut
4 egg white
1/4 tsp salt
2 tbs flour
1 tsp almond extract.

Mix dry ingredient together first then pour in the eggs and extract, mix together, form into balls.  Put into a pre heated over at 325 and cook or 20 mins. (or until slight brown. )  See, that's so easy!  They taste really awesome, they're really fun for kids to make (and relatively mess free) and they're pretty cheap.  I got this recipe off the back of the bag of shredded coconut and was really impressed at how much better these were than the store bought ones.
